Tune in and learn how to make a fantastic pasta dish with mushrooms and pistachios and tortino al ciocolatto - small chocolate cakes with a soft chocolate core - for dessert. This dinner will impress your date for sure!
As usual, here are the recipes:
Pasta with mushrooms and pistachios
6 tablespoons of unsalted butter
1 pound of fresh mushrooms (sliced)
1 large onion (diced)
2 scallots (sliced)
2 cups vegetable stock
2 tablespoons of fresh parsley
1/2 cup roasted unsalted pistachios
1/2 teaspoon of fresh lemon juice
2 tablespoons of olive oil
A little bit of chili
Salt and pepper
1 pound of pasta
(Freshly) grated parmesan cheese for serving.
1. Melt 4 tablespoons of butter in a large, deep skillet. Add onion and cook on low heat until the onion is soft, but not brown (10 min.). Remove the onion from the skillet, but keep as much of the butter as possible.
2. Add mushrooms to the skillet, season with salt and pepper and cook on high heat until the liquid has evaporated. remember to stir! Add scallots and let it cook for 1 minute. Return the onion to the skillet, add vegetable stock and parsley, and let it simmer on moderate heat until liquid is reduced to 1/4 cup. Add the 2 remaining tablespoons of butter, the pistachios, the lemon juice, the chili and stir until the butter is melted.
3. Cook the pasta until al dente and afterwards drain for wate, leaving about 1/2 cup of the cooking water.
4. Add the pasta to the skillet along with the cooking water and olive oil, cook on medium/high heat and stir until the pasta is covered in a thick sauce.
5. Serve the pasta dish with freshly grated parmesan cheese.
Tortinos al ciocolatto/Small chocolate cakes with a soft chocolate core
1/2 pound of dark chocolate or 1½ cup of dark chocolate chips
5 tablespoons of butter
2/3 cup of sugar
4 eggs
1 tablespoon vanilla or a little bit of vanilla extract
1 cup all-purpose flour
A little bit of salt
1. Preheat oven to 380 degrees
2. Melt the chocolate and let it cool
3. In a bowl mix butter, sugar, eggs, salt and vanilla.
4. Add flour and mix until it is smooth.
5. Add the melted chocolate and stir.
6. Grease a muffin/cupcake pan and distribute the cake mix in the pan.
7. Bake for 10-12 minutes.
